Malt is the major ingredient of beer and whisky and is present in many foods. It is made by the controlled germination of barley modifying the starch into a fermentable sugar known as ‘matlose’. Malting was the dominant local industry and in the 18th century Ware became the principal supplier to the London brewers. Until the 1960s malt was made in Ware in traditional ‘floor maltings’ as illustrated on the other side of this plinth. A mechanised malting was built at Broadmeads by Harrington Page & Co., later part of Paul’s Malt. Its closure in 1994 bought to an end a tradition of at least six hundred years.
